Would You Stop at Just One? Protein Pancake Bites




Pancake Bites:

2 Cups of All Purpose Flour (GF All Purpose Flour as alternative)

2 TBLS Granulated Sugar

2 tsp Baking Powder

1/2 tsp Baking Soda

1/2 tsp Salt

1 3/4 Cup Buttermilk

2 Large Eggs

3 TBLS Unsalted Butter, Melted

Blueberries, raspberries, strawberries, mini chocolate chips, cinnamon/sugar

Maple Syrup for Serving


Directions:

Preheat oven to 400 degrees.

In a mixing bowl, whisk together flour, sugar, baking powder, baking soda and salt.

In a separate bowl, whisk together buttermilk, eggs and melted butter.

Slowly pour the buttermilk mixture in to the flour mixture and mix until combined.

Batter will be slightly lumpy. Allow the batter to rest 2 minutes.

Spray each muffin well with non stick cooking spray.

Fill each muffin well about 2/3 full. (heaping TBLS full if using a mini pan)

If adding fruit, add blueberries, as an example, into the batter or mini chocolate chips etc.

Bake in preheated oven 10-12 minutes

Cool completely using a knife to loosen edges and invert on to a wire rack.

Serve with Maple Syrup.
