Meatloaf + Cupcakes = Meatloaf Cupcakes



Meatloaf:

1 Pound ground beef, lean 2 eggs, beaten 1 Cup Plain Panko Bread Crumbs 3/4 Cup ketchup, divided

1/4 Cup Brown Sugar meat loaf seasoning (below)


MEAT LOAF SEASONING 1 tsp Dried Mustard (1 tsp dry = 1 TBLS Prepared Mustard)

1 tsp Paprika 1/2 tsp Salt 3/4 tsp Dried Thyme

3/4 tsp Basil

1/2 tsp Pepper

1 tsp Garlic Powder

1 tsp Onion Powder


Mashed Cauliflower (AKA Frosting for Cupcakes)

1 Medium Head of Cauliflower

3 Cloves of Garlic

1 TBL Olive Oil

1/2 tsp Salt

1/8 tsp Pepper

Garnish: Cheddar Cheese, Bacon Bits, Green Onions


Boil Water with salt. Add the Cauliflower and Garlic. Boil for 10 minutes. Drain the water and let cauliflower set in pan for 2 minutes.

Transfer Cauliflower and Garlic to food processor or bowl. Add Olive Oil, Salt and Pepper and mix until creamy. Adjust Salt and Pepper if needed for flavor.

Directions:

Preheat the oven to 350 degrees. Prepare a muffin pan.

Mix ground beef, eggs, 1/2 ketchup, meatloaf seasoning.

Mix remaining ketchup and brown sugar and set aside

Place approximately 1/4 cup meat mixture in to the tin vessel.

Top with the ketchup/brown sugar mixture.

Bake for 20 minutes.


Assemble Meatloaf Cupcakes:

Once Meatloaf is cooked, take Cauliflower Mash and add to the top of each meatloaf cupcake. Top with Cheddar Cheese and Bacon Bits, Green Onion if desired.
