KIDS Fruit & Veggie Rice



Kid Friendly Fried Rice:

2 TBL Unsalted Butter

2 TBL Oil

2 Cups Cooked Rice - Rice must be completely cooled

1 Cup of Fresh Pineapple - Replace with 1 - Can of Pineapple chunks -Drained / Reserve Juice

3 TBL Soy Sauce or Teriyaki Sauce + additional to taste

1 tsp Sugar

1 Onion - Chopped Finely or Use 1 Bag Frozen Chopped Onion - Thawed

1 Bag of Frozen Mixed Vegetables - Thawed - Carrot/Pea, Broccoli/Cauliflower

Sesame Oil - Optional

Green Onion - Optional


Directions:

Melt butter with 1 TBL of oil in large wok or skillet.

Drain Pineapple and KEEP Juice

Add pineapple until caramelized about 3 minutes. Remove from pan.

Combine the Pineapple Juice with Soy Sauce or Teriyaki & sugar and set aside.

Add 1 TBL of oil to pan and add onions until soften about 3 minutes

Add COLD rice to the pan and give it a good stir. Coat the rice good with the onion.

Add vegetables. Stir to combine.

Top with Pineapple Soy Sauce Mixture and additional Sesame Oil if desired and combine.

Garnish with Green Onions.
