Even a Picky Eater will eat this Healthy Muffin

Recipe for Spinach Banana Muffin:

1 Ripe Banana (6 ounces of Applesauce)

1/4 Cup of Water

1/4 Cup of Peanut Butter

1 egg

1/4 Cup of Honey (Maple Syrup can be a replacement)

2 Cups of Fresh Spinach

1 Cup of Rolled Oats

1/4 tsp of baking soda

1/4 tsp all spice (cinnamon or nutmeg can be a replacement)

1/2 tsp vanilla extract

1/8 tsp salt


Preheat oven to 350 Degrees

Spray a mini muffin pan

In a blender, add all the ingredients.

Combine until well mixed and smooth.

Pour the batter in to the prepared muffin pan.

Bake until the muffins rise and feel firm when touched about 12-15 mins.

The edges should be lightly brown.

Cool completely.

Store in a airtight container.
