Pineapple Fried Rice:
1 TBL Unsalted Butter
2 TBL Oil - Vegetable, Canola work best
1 Ripe Pineapple - Replace with 1 - Can of pineapple chunks
1 TBL Sesame Oil
4 Garlic Cloves- Minced
1 Onion - Chopped Finely
1 TBL Curry Powder
1/2 tsp Ginger Powder - 1 1/2 tsp Grated Fresh Ginger
4 Cups Chilled long grain rice (Jasmine or Basmati)
1 Cup Raisins or Craisins
1/2 Cup of unsalted roasted cashews
2 Roma Tomatoes - chopped
2 TBL Fish Sauce
1 TBL Oyster Sauce
1/2 TBL Sugar
1/4 tsp Pepper
1/4 tsp salt - Salt to taste
1 Pound of Cooked Chicken or Shrimp can be added to this dish.
Soy Sauce if desired
Green Onions thinly Sliced to taste/garnish
Directions:
Melt butter with 1 TBL of oil in large wok or skillet.
Add pineapple until caramelized. Remove from pan.
Add 1 TBL of oil plus 1 TBL sesame oil and add onions.
Add curry powder, ginger powder, garlic and cook 3 minutes.
Add COLD rice to the pan and give it a good stir. Coat the rice good with the onion, garlic and seasonings.
Add the Cashews, tomatoes, pineapple, + cooked chicken/shrimp if using, fish sauce, oyster sauce, salt and pepper.
Stir to combine.
Top with Soy Sauce and additional Sesame Oil.
Garnish with Green Onions.
